Another Canada Day long weekend has come and gone. What did you do? I wanted to make some “Canada Day” French macarons, you know, in red and white. So, after a day of lounging around and shopping with mom on Saturday, I mustered-up the energy on Sunday to make them. I prepped all my ingredients and followed the recipe very carefully. At one point, my egg whites weren’t whipping up and I had to throw them out. That’s alright, because I have my dry ingredients ready to go and just needed to whip the egg whites again. I’m cool with that. When the whites were whipped up, I combined them with my dry ingredients. I was very careful not to over-fold (or mix). Got my piping bag and was ready to go. Piped the shells and let it sat for about 40 minutes before baking them. They looked all fine until I took them out of the oven – broken shells!!! Some of them turned out alright, but one tray’s worth of shells was broken. I couldn’t salvage a single one. =( My frustration then got the better of me. I started to snap at my husband (sorry, dear) and was getting grumpier by the minute. I complained, complained, and complained. My husband has observed that every time I make these macarons, I get really tense and stress, and he is the one who suffers from “my wrath”. So, after some thought, I’ve decided to say, “Farewell, oh lovely French macarons!” I have decided that this will be my last batch of macarons for a little while, at least in the foreseeable future.

These are my broken shells – most of them were matcha powder-dusted. =( sniff, sniff. I’m keeping them so I can make a trifle with them. Not letting my hard work go to the trash.
